Delicata Squash Donuts

My family calls these “healthy donuts” and I tell you… they disappear within 10 minutes after coming out of the oven.
I first tried delicata squash 20+ years ago when I was in health coach school. SO GOOD!
Delicata squash are only around for a month or two in the fall... so if you see them at the store... grab one or two to try!
INGREDIENTS:
Delicata squash
Coconut oil or butter/ghee
Sea salt
Pepper
INSTRUCTIONS:
Cut your delicata squash into rounds.
Scoop out the seeds.
Oil rounds up with coconut oil or butter/ghee.
Put on baking dish and sprinkle sea salt + pepper on them.
Bake for 20-25 minutes at 425 degrees (flip them halfway through).
Save the seeds so you can grow delicata squash next year!
